Ingredients:-

Whole urad dal without skin – 11/2 cups

Ginger – a small piece

Greenchilly – 2 no.s

Peppercorns – 1 tbsp. / to taste

Salt – 11/2 – 13/4 tsp

Baking powder – 1/2 tsp

Oil to deep fry

Method:-

Soak the urad dal for 7-8 hours.(I soaked it overnight).

Grind it with ginger, greenchilly, salt and baking powder adding 30-50 ml. water(/that just enough to grind it to a very fine smooth paste.).

The ground paste

Heat oil till steaming hot.

Apply little water on your hands.Take a little ground paste and make a hole in the center to shape it like vadas.

Carefully slide it into the hot oil and deep fry on very low heat till golden brown on both sides.

Tip:-

Refrigerate the batter for a couple of hours to get very crisp vadas.
