Vegetable Kabsa / Arabic Rice

Vegetable Kabsa

This is a very easy to prepare delicious dish.Kabsa is not at all spicy and kids will love it.This dish gets it’s unique flavour from cardamom powder and fried cumin powder.


Basmathi rice – 1 cup

Onion – 1 big ( thinly sliced)

Cloves – 3 no.s

Cinnamon – 1″ stick

Frozen greenpeas – 1 cup

Carrot – 1/2 cup ( Finely chopped)

French Beans – 1/2 cup (finely chopped)

Fried cumin powder – 1 tsp.

Cardamom powder -1/2 tsp

Turmeric powder – 1/2 tsp

Tomato ketchup – 2 tbsp (rounded)

Parsley – 2 tbsp (chopped)

Olive oil – 2 tbsp

Chicken stock – 2 cups

Salt as needed


Heat the olive oil and add the cloves and cinnamon. When u get an aroma add the thinly sliced onion and saute till it turns golden brown. Add the peas and the chopped vegetables. Fry for 5 minutes.

Add the washed and drained rice and fry till opaque. Add 4 cups of boiling chicken stock, the spice powders, tomato ketchup, salt and the chopped parsley leaves. Bring to a second boil. Cover cook on low heat for 10 minutes. Keep undisturbed for 10 more minutes.
