Chicken pizza with homemade pizza sauce

Chicken Pizza

Ingredients:-

For the pizza base

All purpose flour – 11/2 cups

Instant yeast- 1 level tsp

Lukewarm water – 2 tbsp + 3/4 cup (/ as needed)

Sugar – 1.5 heaping tsp

Salt – 3/4 tsp

Olive oil – 2 tbsp

For the pizza sauce

Garlic – 1 big clove, minced

Onion – 1 medium, finely chopped

Celery – 1 tsp, chopped

Tomato – 11/2 cups, chopped

Tomato ketchup – 1/2 cup

Sugar – 1 tsp

Salt as needed

Oregano – 1 tbsp

Basil – 1 tsp

Pepper powder – 1/4 tsp

Butter – 1 tbsp ( optional)

Water – 1/4 cup

For the topping

Chicken – 1 cup, chopped finely

Green capsicum – 1/4 cup

Onion – 3/4 cup, finely chopped + 1/2 cup, sliced long & thin

Greenchilly – 2 numbers, chopped

Pepper powder – 1/2 tsp

Red chilly powder – 1/2 tsp

Oregano –  1 tsp

Mozzarella cheese as needed

Oregano – a pinch ( for sprinkling)

Crushed fresh basil – 2 tsp

Method:-

Dissolve 1 tsp of sugar & the yeast in 2 tbsp of lukewarm water. Keep aside for 15 minutes till foamy.

Add salt & 2 tsp of sugar to the flour & mix. Pour the yeast mixture, oil & lukewarm water & knead well to make a smooth dough. Cover with a a damp cloth & keep undisturbed for 3 hours/ till the dough doubles in volume.

The kneaded dough after 3 hours

For the sauce heat the oil & saute the garlic till you get a smell. Add the finely chopped onions, celery & saute till the onion turns translucent. Add the chopped tomatoes, tomato ketchup, basil, oregano, water, sugar & salt; bring to a boil. Cover cook on low heat for 15 minutes. Add the pepper powder & butter. Let cool. Grind to a smooth paste & keep aside.

Pizza sauce

Marinate the chopped chicken with the red chilly powder, salt & pepper powder. Heat the oil & saute the garlic clove. Add the onion & greenchillies. Saute till the onion turns translucent. Stir in the marinated chicken pieces & fry on medium heat for 10 minutes. Check for salt; add more if needed. Add the oregano, sliced onions & bell pepper. Mix well.

Preheat the oven to 200C.

Roll out the dough into a circle using your rolling pin/ spread it out with your hands. Poke it with a fork at several places. Spread out a little pizza sauce on it followed by the topping. Finally spread the cheese & sprinkle the herbs on the top of the pizza.

Bake the pizza in a preheated oven at 200C for 25-30 minutes/ till the cheese melts & turns a bit brown.

Serve it hot.
