This is a very easy to make gravy that goes well with roti. It gets ready within minutes & tastes great.
Chana dal – 3/4 cup
Turmeric powder – 1/2 tsp
Ghee – 1/4 tsp
Spinach – 1 cup ( tightly packed), chopped
Tomato – 1 small/ 1/2 cup
Onion – 1 medium, sliced long & thin
Garlic – 2 big cloves, chopped
Greenchilly – 4 numbers, slit
Cumin seeds – 3/4 tsp
Thick coconut milk – 3/4 cup / use 11/2 tbsp coconut milk powder + 3/4 cup of water
Cook the dal adding 2 cups of water, turmeric powder & ghee. Simmer for 15 minutes after the first whistle. Dal should be soft but not mushy.
Heat the oil & crackle the cumin seeds. Add the onion, garlic & greenchillies. Saute till the onion turns golden brown. Add the cooked dal along with its water, spinach & tomato. Bring to a boil & cover cook on medium low heat for 10 -15 minutes.
Finally add the thick coconut milk, enough salt & let boil on low heat for a minute. Remove from heat.
