Sweet Nutty Luchis to celebrate – It’s my 200th post

Sweet Luchis

For the Luchis:-

All purpose flour – 2 cups

Canola oil – 4 tbsp

Salt – 1/2 tsp- 3/4 tsp

Cold water – slightly less than 1 cup/ as needed

Oil to deep fry

For the nutty topping:-

Sugar – 1/2 cup

Water – 1/4 cup

Grated coconut – 3/4 cup

Cashews – 25 grams

Almonds – 25 grams

Poppy seeds – 1 tsp

Milk – 1/4 – 1/2 cup

Crushed cardamom – 1/2 tsp

To make the nutty topping soak the cashews, almonds & poppy seeds in hot water  for atleast 1 hour. Peel the almonds. Grind the cashews, almonds, poppy seeds & the grated coconut to a very smooth paste adding very little water. Mix together the sugar & 1/4 cup of water. Bring to a boil & stir till the sugar dissolves completely. Add the ground paste & bring to a second boil. Add the crushed cardamom & the milk just to slightly loosen the topping ( it should be thick, we are adding the milk to just make the topping spreadable). Let cool.

To make the luchis add the salt & oil to the flour & mix well. Add the water to the flour little by little & knead to a puri like dough. Divide into 16 equal portions. Roll out each portions like you do for puris & deep fry in hot oil. They will puff up. Spread the topping over the puris & serve them hot. This is a very delicious sweet; hot crispy luchis with sweet nutty topping is really irresistible.
