I had used 400 grams of chopped frozen spinach &100 grams of paneer for this recipe.
Add 2 tbsp of water to the spinach & cook it in the microwave for 8 minutes. Let it cool down, pulse to a coarse mixture in your mixer/grinder. Keep this paste aside.
Heat 2 tbsps of canola oil & add 2 medium onions chopped finely, 1/2″ piece of ginger & 1 big garlic clove. Saute till the onion turns golden brown. Add 3/4 tsp of red chilly, 2 tsp of coriander & 1/4 tsp of turmeric powders & fry for a minute; stir in 1 pureed tomato & saute till oil seperates. Add 1/2 tsp of cumin powder, 1/2 tsp of garam masala powder & the spinach paste; bring to a boil & let cook on low heat for 3-5 minutes.
Add 1/2 cup of low fat milk & the paneer cubes & cook for 5 minutes more on low heat till paneer is soft. Remove fromheat & serve with Roti.
