Chicken Tikka & Chicken Tikka Pizza

Chicken Tikka

Chicken Tikka:-


Chicken – 450 grams ( Boneless, skinless breast pieces), cubed

Salt – 1 tsp / to taste

Thick curd – 1/2 cup

Ginger paste – 13/4 tsp

Garlic paste – 1 tsp

Kasoori methi – 1/2 tsp

Crushed ajwain – 1/2 tsp

Kashmiri chilly powder – 2 tsp / use 1 tsp of red chilly powder

Black salt – 1/4 tsp

Lime juice – 3 tbsp

Thick curd – 1/2 cup

Red food color – a pinch ( optional, I didn’t use it)

Mustard oil – 11/2 tbsp


Marinate the chicken pieces with all the ingredients( except oil) for atleast 2 hours in your refrigerator/ preferably overnight in your freezer.

Line a broiler pan with Al foil & grease the foil with 1 tbsp of mustard oil. Place the marinated chicken pieces & grill for 30 minutes/ till cooked. Turn the pieces halfway the grilling time & brush with litle oil on top.

For the pizza base

All purpose flour – 11/2 cups

Instant yeast – 1 level tsp

Lukewarm water – 2 tbsp + 3/4 cup (/ as needed)

Sugar – 1 .5 heaping tsps

Salt – 3/4 tsp

Italian herbs – 1 tsp

Olive oil – 2 tbsp

For the pizza sauce

Garlic – 1 big clove, minced

Onion – 1 medium, finely chopped

Celery – 1 tsp, chopped

Tomato – 11/2 cups, chopped

Tomato ketchup – 1/2 cup

Sugar – 1 tsp

Salt as needed

Oregano – 1 tbsp

Basil – 1 tsp

Pepper powder – 1/4 tsp

Butter – 1 tbsp ( optional)

Water – 1/4 cup

For the topping

Chicken tikka – 1oo grams

Green capsicum – 1/4 cup

Onion – 1/2 cup, sliced long & thin

Tomato – 1/4 cup, chopped

Oregano –  1/2 tsp

Mozzarella cheese as needed ( I used a mixture of mozzarella cheese, romano cheese, parmesan cheese & natural cheese)

Oregano – a pinch ( for sprinkling)

Crushed fresh basil – 2 tsp


Dissolve 1 tsp of sugar & the yeast in 2 tbsp of lukewarm water. Keep aside for 15 minutes till foamy.

Add Italian herbs, salt & 2 tsp of sugar to the flour & mix. Pour the yeast mixture, oil & lukewarm water & knead well to make a smooth dough. Cover with a a damp cloth & keep undisturbed for 3 hours/ till the dough doubles in volume.

For the sauce heat the oil & saute the garlic till you get a smell. Add the finely chopped onions, celery & saute till the onion turns translucent. Add the chopped tomatoes, tomato ketchup, basil, oregano, water, sugar & salt; bring to a boil. Cover cook on low heat for 15 minutes. Add the pepper powder & butter. Let cool. Grind to a smooth paste & keep aside.

Preheat the oven to 200C.

Roll out the dough into a circle using your rolling pin/ spread it out with your hands directly on to the pizza tray. Poke it with a fork at several places. Spread out a little pizza sauce on it followed by the grated cheese & the topping. Finally spread the cheese over the pizza topping & sprinkle the herbs on the top of the cheese.

Bake the pizza in a preheated oven at 200C for 25-30 minutes/ till the cheese melts & turns a bit brown.

Serve it hot.
