Malapua / Shallow fried sweetened milk rava pancakes



All purpose flour – 3/4 cup

Rava – 1 cup

Baking powder – 1/4 tsp

Salt – 2 pinches

Crumbled paneer – 50 grams

Condensed milk – 1/2 tin

Water – 11/4 cups

Ghee/ Clarified Butter – as needed for shallow frying the pancakes, around 1/2 cup

For the sugar syrup

Sugar – 11/4 cups

Water – 3/4 cup

Rose essence – 1/4 tsp

Yellow color – a pinch (optional)


Mix together the rava, flour, baking powder, salt, condensed milk, crumbled paneer & water to make a smooth pancake like batter. Cover & keep aside for 20 minutes.

For the syrup combine water & sugar & bring to a boil. Cook on medium heat for 2 minutes/ till the syrup turns sticky. Mix in the color & essence; turn off heat.

Heat ghee & pour a ladleful of batter; fry both sides of the pancake on medium heat till they turn brown & crisp at the edges. Dip the fried pancakes immediately into the hot syrup & transfer to a platter.

Fold the sweetened pancakes into half & serve them hot.

Note:- You can deep fry these pancakes too!
