I had seen the recipe for Raagi cookies at Aayis Recipes & wanted to give it a try. I added some whole wheat flour too & the cookies came out great.
Raagi flour – 1/2 cup
Whole wheat flour – 1/2 cup
Powdered sugar – 1/2 cup
Butter – 100 grams, at room temperature
Powdered cardamom – 1/4 tsp
Salt – 1/4 tsp
Milk – 1 tbsp / as needed
Baking powder – 1/2 tsp
Preheat the oven to 180C. Line a cookie tray with 2 layers of Al foil & grease the upper foil.
Roast the raagi flour on medium low heat for 7 minutes/ till you get an aroma. Transfer to a big mixing bowl & keep aside. Let cool to room temperature. Add the whole wheat flour, salt, sugar, baking powder & powdered cardamom. Mix well & sift this flour mixture 2-3 times.
Add the butter & milk & knead well to make a very soft dough. Divide the dough into 18 balls; flatten a bit.
Place the cookies on the greased Al foil leaving a gap of 1″ in between. Bake the cookies at 180C for 25 minutes (Don’t overbake the cookies, they will harden as time passes). Take out of the oven & let cool for 5 minutes (otherwise the cookies would crumble). Remove the cookies from the foil & let cool completely. Store in air tight containers.
