Heat 1 tbsp of oil & saute 1 medium onion chopped finely. Add 1/2 cup of french beans, 1/2 cup of grated carrots & 1 cup of chopped cauliflower when the onion turns translucent. Stir fry till the veggies turn soft. Let this mixture cool to room temperature.
Beat 4 eggs very well. Add the sauted veggies, 1 chopped tomato, 3/4 tsp red chilly powder, 3/4 tsp pepper powder, 1/2 cup of milk & 1 tsp of salt; beat well again.
Pour little oil in a non-stick frying pan. Make omelettes out of the mixture on low heat. When one side is done sprinkle some grated cheese on top & fold the omelette.
This is a very good breakfast.
