Whole chicken – 1 kg, cut into bite size pieces
Lime juice – of one lime
Salt – 13/4 tsp
Red chilly powder – 1 tbsp
Pepper powder – 1/2 tsp
For the masala:-
Coconut oil – 3 tbsp
Onion – 3 medium, chopped long & thin
Greenchilly – 2 numbers, slit
Garlic – 5 big cloves, chopped
Ginger – 2 tbsp, julienned
Curry leaf – 2 sprigs
Red chilly powder – 1/2 to 1 tsp
Turmeric powder – 1/4 tsp
Coriander powder – 1 tsp ( heaped)
Garam masala powder – 3/4 tsp
Tomato – 1/2 cup, finely chopped
Tomato ketchup – 2 tbsp
Combine the red chilly powder, pepper powder, lime juice & salt. Marinate the chicken pieces with this paste for atleast 3o minutes. Deep fry the marinated chicken pieces till they are fully cooked (Don’t let them brown too much, they will turn hard). Drain & keep aside.
Heat coconut oil. Add the chopped onions, curry leaves, greenchillies, chopped garlic & ginger. Saute till the onion turns to a golden brown color. Add all the masala powders (except garam masala), fry for a minute. Add the chopped tomatoes & saute till they turn mushy. Stir in the tomato ketchup & garam masla powder, add enough salt. Finally add the chicken pieces, mix well & remove from heat.
Serve hot with rice/ roti.
