Vegetable Upma

Ingredients:-

  1. Semolina – 1 cup ( I used QFM brand)
  2. Ghee – 1 tbsp/ use canola oil
  3. Mustard seeds – 1/4 tsp
  4. Urad dal – 1/4 tsp
  5. Chana dal – 1/4 tsp
  6. Dry red chilly – 2 numbers, split
  7. Cury leaf – 1 sprig
  8. Cashews – 1 tbsp (optional)
  9. Raisins – 1 tsp (optional)
  10. Ginger – 3/4 tbsp, finely chopped
  11. Greenchilly – 1 number, finely chopped
  12. Onion – 1 medium, finely chopped
  13. Beans – 4 numbers, fienly chopped
  14. Carrot – 1 medium, finely chopped
  15. Salt – 3/4 – 1 tsp
  16. Sugar – 1/4 – 1/2 tsp
  17. Water – 2 3/4 cup

Method:-

  1. Heat ghee/ oil and splutter the mustard seeds. Add chana dal & urad dal; fry till they turn golden brown. Stir in the split dry red chillies, cashews, raisins & curry leaves. Toast till the cashews turn brown. Saute the chopped ginger & greenchilly.
  2. When you get a nice aroma of the ginger add the onion & fry till it turns translucent. Saute the beans & carrot for 3 minutes.
  3. Add the rava & fry on medium heat for 7 minutes. Transfer to a platter & keep aside.
  4. Bring 2 3/4 cups of water to a boil. Add sugar & salt; quikly add the roasted rava mixture & keep stirring on low heat till water completely evaporates & the upma leaves the sides of the wok like the last stage of halwa.
