Mushroom ( I used Holland mushroom) – 250 grams
All purpose flour – 1/2 cup
Corn flour – 1/2 cup
Pepper powder – 11/4 tsp
Salt – 11/4 tsp
Egg – 1 large, beaten
Water as needed
Tomato ketchup – 1 rounded tbsp
Soy sauce – 1 rounded tbsp
Peanut / Sesame Oil as needed
Ginger – a small piece, julinnned
Garlic – 3 big cloves, chopped
Onion – 1 medium, cut into square pieces
Capsicum – 1/2 a small capsicum
Scallions – 1/4 cup, chopped
Clean the mushrooms & cut each mushroom into 4 or 6 thick slices.
Make a slightly thick batter with the flours, beaten egg, 11/4 tsp of salt, 11/4 tsp of pepper powder adding enough water. Dip each mushroom piece into this batter & deep fry in hot oil on medium low heat till done. Drain & keep aside.
Heat 1 tbsp of oil & saute the ginger juliennes & chopped garlic till you get a very nice aroma. Add the chopped onions, scallions & capsicum; saute till translucent. Add the sauces & a pinch of pepper powder, add salt ( if needed). Fry for a minute & add 1/8 cup of water. Let boil & add the fried mushroom pieces. Saute on medium high heat for 5 minutes/ till dry.
Serve hot with fried rice/ as an appetizer.
Note: You may add a pinch of red food color to impart a gorgeous bright red color to the dish.
