Soak 1 cup of Basmathi Rice for 30 minutes. Drain & keep aside.
Caramelise 2 tsp of sugar, add 1/4 cup of water & cook till sugar completely dissolves. Keep this caramel aside.
Heat 1 tbsp of oil & add 3/4th of a medium sized onion chopped long & thin. Saute till giolden brown. Keep aside half of the fried onions for garnish.
Add the rice & fry for a minute on high heat. Add 13/4 cups of boiling water, caramel & 1 tsp of salt; cover cook on low heat for 10 minutes. Garnish with fried onions.
