Chocolate banana swirl cake/ loaf

Ingredients:-

  1. All purpose flour – 1 c
  2. Baking powder – 1 tsp
  3. Baking soda – 1/4 tsp
  4. Salt – a pinch
  5. Ripe bananas – 2 medium, mashed well with a fork
  6. Butter ( at room temp.) – 75 g
  7. Caster sugar – 3/4 c
  8. Eggs – 1, large
  9. Vanilla essence – 3/4 tsp
  10. Thick curd – 1 tbsp
  11. Walnuts – 1/4 c
  12. Melted and cooled semisweet chocolate – 1/4 c

Method:-

  1. Preheat the oven to 180C.
  2. Sift together the flour, baking powder, baking soda and salt.
  3. Beat the butter for 3 minutes with a hand mixer till creamy. Add the caster sugar in 3 additions and beat well after each addition. Beat well for a good 10 minutes.
  4. Beat in the egg and the vanilla essence.
  5. Fold in the mashed bananas.
  6. Fold in the sifted flour mixture.
  7. Add the thick curd and the crushed walnuts and mix.
  8. Divide the batter into 2 parts. Keep one part plain & to the other part add the melted chocolate
  9. Pour dark and light cake batters into a prepared 2 lb loaf tin alternately and swirl with a butter knife to give a marble effect.
  10. Bake at 180C for 35 minutes.
