Mix together 1 cup of plain flour ( you can use 1/2 cup of plain flour +1/2 cup of whole wheat flour) & 1/2 tsp of salt. Add 2 tbsp of shortening/oil to the flour mixture & mix well till the flour looks like coarse bread crumbs. Pour enough water to make a smooth dough & keep aside for 10-15 minutes.
For the filling dry roast 1/2 cup of rice flakes/aval. Powder the flakes along with 3 tbsps of sugar in your mixture/ grinder; add 1/4 tsp of cardamom powder & 2 tsp of toasted sesame seeds.
Make 6 small lemon sized balls from the dough & roll it out thin like you do for roti. Heat a pan & cook both sides of the rolled out dough till it just changes color; do not overcook! Fold the cooked roti to form a semicircle & fold this semicircle again; fill the 2 cones with the rice flakes mixture.
Heat 2 tbsp of ghee in a frying pan & fry both sides of the madakku till crisp & brown flecks appear on both sides.
