You need 1 big snakeguord for this recipe. Scrape the snakeguord & cut it into 2″pieces as shown, remove the seeds completely & keep aside.
For the filling heat 1 tbsp of canola oil & splutter 1/2 tsp of mustard seeds. Add 1/2 tsp of chana dal & fry till it turns brown. Add 1/2″ piece of ginger (finely chopped), 1 brown onion (finely chopped) & 2 greenchillies (deseeded & finely chopped). Add 1 tomato when the onion turns golden brown & fry till it turns mushy. Add 1/2 cup of shredded coconut, 1 big potato (boiled & mashed) & 3/4-1 tsp of salt. Let this filling cool completely.
Stuff the prepared snakeguord pieces with this filling tightly & cook in your microwave oven on high power for 8 minutes.
Make a slightly thick batter with 1 cup of gram flour,1 tbsp of rice flour, 1 tsp salt & a pinch of baking soda. Dip each snakegourd piece into this batter & deep fry in hot oil till golden brown on both sides.
