Egg -2 numbers, large, hardboiled & peeled
Egg – 1, beaten
Stale bread crumbs – as needed
Canola oil – 1 tbsp + as needed to deep fry
Onion- 1 medium, finely chopped
Curry leaves – a few, minced
Greenchilly – 4 numbers, deseeded & chopped
Potato – 1 big, cooked & mashed/grated
Salt as needed
Pepper powder -3/4 tsp
For the coating heat 1 tbsp of oil & saute the onions, curry leaves & greenchilly. Fry till the onion turns golden brown. Add the mashed potato, pepper powder & salt, mix well & remove from heat. Let this mixture cool completely.
Divide each egg into two & carefully remove the yolks without breaking the whites. Crumble the yolks & add a pinch each of pepper powder & salt. Stuff the whites with this mixture & cover them with the cooled potato mixture.
Dip each coated egg into the beaten egg & roll in bread crumbs. Deep fry in hot oil till golden brown & drain on paper towels.
