This pizza is topped with the rich alfredo sauce instead of the regular red tomato based sauce. It is then topped with a real mouth watering tangy braised chicken. And always use instant yeast for making pizzas otherwise the dough would taste a bit sour.
This recipe will make a large 10″ pizza with regular crust.
For the pizza base
All purpose flour – 11/2 cups
Instant yeast – 1 level tsp
Lukewarm water – 2 tbsp + 3/4 cup (/ as needed)
Sugar –1.5 heaping tsps
Salt – 3/4 tsp
Olive oil – 2 tbsps
For the alfredo sauce
Garlic – 1 big clove, minced
Butter – 25 grams
Milk – 1/4 c
Cooking cream – 1/4 c
Mixed herbs – 1/ tsp ( oregano. basil, rosemary)
Parsley – 1/4 tsp
Paprika powder – 1/2 tsp
Salt as needed
Pepper powder – 1/4 tsp
Cream cheese cubes/ triangles – 2 numbers, small
For the topping
Chicken – 250 grams, chopped finely
Sweet corn – 1/4 c ( tinned one)
Black olives – 4 numbers
Red capsicum – 1/4 cup
Yellow capsicum – 1/4 cup
Onion –1/2 cup, , sliced long & thin
Pickled jalapenos – 2 numbers, chopped
Mozzarella cheese as needed ( I like to use Monte Cristo Brand modified with palm oil)
Oregano – a pinch ( for sprinkling)
Crushed fresh basil – 2 tsp
For the pizza base, mix together the plain flour, yeast, sugar, olive oil , salt and lukewarm water. Knead the dough for a good 15 minutes, also keep banging the dough as you knead. Cover with a a damp cloth & keep undisturbed for 1-1.5 hours/ till the dough doubles in volume.While the dough is resting, make the sauce and the pizza toppings.
For the alfredo sauce, heat 25 grams of butter. Add the minced garlic and cook till you get a nice aroma. Add the milk and the cream, salt, mixed herbs, dried parsley, pepper powder, paprika powder and the cream cheese cubes. Cook till the sauce is really very thick. Let cool down completely to room temperature.
For the chicken topping, marinate the chopped chicken with the 1 tsp garlic paste, 1/2 tsp of salt , 1/2 tsp of pepper powder, 1 tbsp soy sauce, 1 tbsp worcestershire sauce and 1 tbsp of lime juice for 1 hour. Heat 1 tbsp of oil & add the marinated chicken. Cook for 10-12 minutes/ till cooked completely.
Preheat the oven to 200C.
Punch the risen dough and place it in a 10″ pizza pan. Poke it with a fork at several places. Spread out the alfredo sauce on it followed by a layer of grated mozzarella cheese. Top with the cooked chicken cubes, olives, jalapenos, sweetcorn, onions & capsicum. Sprinkle more grated mozzarella cheese, oregano & cushed basil on top.
Bake the pizza in a preheated oven at 200C for 28-30 minutes/ till the cheese melts & turns a bit brown.
Serve it hot.
