Eggless & Butterless peanut butter and oatmeal cookies

Ingredients:-

  1. Smooth peanut butter – 1/2 c
  2. Brown sugar – 1/4 + 1/8 c, tightly packed
  3. salt – a pinch
  4. Wheat flour/ atta – 3/4c + 1 tbsp
  5. Baking soda – 1/4 tsp
  6. Cinnamon powder – 1/2 tsp
  7. Dessicated coconut – 1/4 c
  8. Old fashioned steel cut oats – 1/2 c
  9. Roasted and crushed peanuts – 2 tbsps
  10. Lime rind – 1 tsp
  11. Honey – 1 tbsp
  12. Chilled milk – 2 tbsps

Method:-

  1. Preheat the oven to 180C.
  2. Cream together the peanut butter, brown sugar and salt.
  3. Add atta, baking soda, cinnamon powder, dessicated coconut, oats, peanuts, lime rind, honey & the chilled milk.
  4. Make a stiff dough.
  5. Divide the mixture into 12 equal portions. Roll each portion into a ball & flat into a 1/8″ patty.
  6. Place on a baking tray lined with foil.
  7. Bake for 16-17 minutes.
