Savala Vada – Cherai style



This is one of my favourite nalumanipalaharams. These vadas are crispy from outside but soft from the inside.


  1. All purpose flour – 1 c
  2. Baking soda – 1/2 tsp
  3. Salt – 3/4 tsp
  4. Onion – half of a medium, finely chopped
  5. Greenchillies – 2 big numbers, chopped very finely
  6. Garam masala – a pinch
  7. Curryleaves – 3 to 4, finely torn
  8. Ginger – 1 tsp
  9. Thick curd – 3 tbsps
  10. Hot oil – 1 tbsp
  11. Oil to deep fry


  1. Mix together all the ingredients from 1 to 11 to make a slightly sticky dough.
  2. Apply little water on your hands and shape the vadas ( like uzhunnuvadas with a hole in the center).
  3. Deep fry in hot oil on medium low ( otherwise the vadas won’t cook from inside) heat till golden brown on both sides.
  4. Serve hot with tea/ coffee.
