Vegetable and Chicken rolls

Ingredients:-

  1. Thin, large whole wheat rotis – 4 numbers
  2. Canola oil – 2 tbsps
  3. Onion – 1, big; finely chopped
  4. Green chilly – 2 numbers
  5. Ginger – 1 tsp, finely chopped
  6. Garlic – 2 tsp
  7. Julienned carrot – 1/2 c
  8. Julienned bellpepper – 1/2 c
  9. Shredded cabbage – 1/2 c
  10. French beans – 2 numbers, finely chopped
  11. Red chilly powder – 1 tsp ( level)
  12. Coriander powder – 1 tsp (level)
  13. Turmeric powder – 1/4 tsp
  14. Tomato – 1 number ( ground to a paste in mixer)
  15. Chicken – 150 grams, boiled and shredded
  16. Cilantro – 1/4 c
  17. Chaat masala – 1/4 to 1/2 tsp

Method:-

  1. Heat oil & add the finely chopped onion, greenchilly, ginger & garlic. Fry till the onion turns slightly brown.
  2. Add all the veggies & cook till the onion turns really golden brown in color.
  3. Add all the spice powders & cook on low heat for a minute.
  4. Add the pureed tomato & saute till oil seperates.
  5. Add enough salt & the shredded chicken. Stir in the chopped cilantro. Mix well for a minute.
  6. Add the chat masala & remove from heat.
  7. Divide the mixture into 4 portions.
  8. Spread a portion of the filling on a roti & roll it tightly. Repeat with the other portions & rotis.
  9. Just before serving, heat 1 tbsp of oil & fry the roll with tucked side down first till golden brown in colour on both the sides.
  10. Serve hot.
