Carrot and Dates cake with wheat flour

  1. Preheat the oven to 190C.
  2. Sift together 1.25 cup of wheat flour/atta, 1 tsp of baking powder, 1/2 tsp of baking soda, a pinch of salt, 1/4 tsp of mace powder & 1/4 tsp of cinnamon powder.
  3. Caramelise 3 tbsps of sugar to a thick syrup & keep aside.
  4. Add 1 tbsp of rum to 1 cup of chopped dates ( remove the seeds) & keep aside.
  5. Beat 3 large eggs with a hand mixer for 7 minutes. Add 1/2 cup of caster sugar & beat again for 7-8 minutes.Beat in 3/4 cup of canola oil + 1.5 tsp of vanilla essence.. Add the cooled caramel & beat again.
  6. Fold in the sifted flour mixture. Fold in 1 c of grated carrots, the dates & 1/2 cup of crushed almonds.
  7. Pour the mixture into a 2 lb loaf tin.
  8. Bake at 190C for 30 minutes & 180C for 25 minutes.
