- Let’s prepare the croquettes first. Heat 2 tbsps of butter in a pan & add 1 small onion ( finely chopped) . Cook for 3 minutes. Add 1 cup of grated carrot & 1 cup of grated cauliflower. Cook for 4 to 5 minutes. Add 2 boiled, peeled & grated/mashed potatoes. Add 2 tsps of cornstarch, 1 tbsp of tomato ketchup, 1 tsp of salt & 1/4 tsp of pepper powder. Mix well for 6 to 7 minutes. The whole thing will come together as a mass. remove from heat & let cool. Shape into 2 long rolls, about 2.5″ in length.Mix together 2 tbsps of cornstarch and 1/4 cup of water. Dip the rolls in this batter & immediately roll in plain flour spread in a platter. Refrigerate for 5- 10 minutes. Shallow fry the croquettes till browned & crisp. Drain on paper towels.
- For the mayo spread mix together 1/4 cup of grated cabbage, 2.5 tbsps of mayonnaise, 2 tsps of milk & 1/4 tsp of lime juice.
- Let’s make the subwiches. Take a hot dog roll and cut it into two keeping one of the ends intact. Spread lettuce ( dipped in ice water previously) & onion rings on the base. Arrange 2 croquettes on it. Spread the mayo mixture on the croquettes. Sprinkle a pinch of salt & pepper. Close wit the other bun half.
- Heat 1 tbsp of butter & grill the subwich till crisp.
- Serve immediately.
Note :- You may use tomato ketchup if you wish.
