Paneer soy chilli Dog

  1. You will need 4 hot dog buns.
  2. Soak 1 cup of soy kheema/ granules in salted hot water for 30 minutes. Squeeze well. Wash & squeeze again.
  3. Heat 1 tbsp of butter+ 1 tsp of oil and add 5 big garlic cloves ( minced) & fry till you get a very nice aroma.
  4. Add 2 medium onions ( finely chopped) & fry till it turns translucent. Add 1/4 th of a medium carrot ( finely chopped) + 1 tsp of celery ( finely chopped) + 7 to 8 peppercorns+ 1 bayleaf. Cook for 2 minutes.
  5. Add 1 tbsp of plain flour & fry for 2 minutes. Add 1 cup of tomato puree & cook for 3-4 minutes. Add soy granules & 2 cups of vegetable stock. Mix well. Add 1.5 tsp of red chilly powder + 1 tsp of mustard paste + 1 tsp of cumin powder+ 11/4 tsp of brown sugar and cook on medium heat till the chilli thickens. Remove from heat & keep warm.
  6. You will now need eight 2″ pieces of paneer. Heat oil in a tawa. Place the paneer fingers on it. Sprinkle salt & red chilli powder & grill till evenly browned from all the sides.
  7. Heat hot dog rolls on a pan/ tawa.
  8. Slit a bun from the top without cutting through. Fill the prepared chilli into the gap & place 2 grilled paneer fingers in it. Top with some more soya chilli.
  9. Serve hot.
