Simple Paneer Vegetable wraps

  1. Heat 2 tbsps of oil. Add 4 medium onions ( thinly sliced ) + 3 big garlic cloves ( minced) + 1 tsps of ginger & fry till the onions turn golden brown in colour.
  2. 2. Add 1/4 – 1/2 cup of beanns ( cut into 1″ strips) & cook on medium high heat for 5 minutes. Add 1 medium carrot ( julienned) + 1/2 c of julienned red capsicum + 1/4 c of sweet corn & cook on medium high heat for  4 -5 minutes. The veggies should be still crunchy.Add 1/2 heaping tsp of paprika powder.
  3. 3. Add 1 big tomato (pureed in the mixer) + salt & cook for 10 minutes/ till dry. Add 1 tbsp of tomato ketchup & mix.
  4. 4.Add 1/2 c of crumbled paneer + salt as needed. Mix well & this is the filling.
  5. 5. For making the wrap, simply take a cooked roti & place the filling generously in a row. Roll tightly & shallow fry in 1 tsp of oil till browned & crisp.
  6. 6.Serve immediately.
