Soy chunks Kathi Roll

  1. Soak 1 cup of soy chunks in salty hot water for 25 minutes. Squeeze the chunks & cook them in your pressure cooker adding 1 cup of water + 11/4 tsp of salt & 1/2 tsp of red chilli powder for 2 whistles on high heat. Let the pressures subside. Open the cooker & transfer the cooked chunks to cold water. Squeeze out all the water from the chunks.
  2. In a pan, heat 2 tbsps of oil & add 3/4 tsp of fennel seeds.Add 2 medium onions (thinly sliced) + 1 greenchilly + 4 big garlic cloves ( minced) & cook till onion turns golden brown in color. Add 1/4 tsp of red chilly powder, 1 heaping tsp of Kitchen King masala & a pinch of turmeric powder. Cook on low heat for 2 minutes.
  3. Add 1/4c of tomato and cook till mushy. Add the cooked chunks & cook for 5 minutes more. Add 1/4 cup of cilantro + 1 tsp of tomato ketchup & mix. The filling is now ready.
  4. You will need cooked all purpose/ atta rotis for making the kathi roll.
  5. For making a roll, beat 1 egg adding salt & pepper powder. Grease a non-stick pan with oil & pour the beaten egg in it. Place the roti over the egg very fast before it sets & press. Cook for a minute & flip. Place the soy chunk masala in a row & roll tightly. Pan fry in  1 tsp of oil till crisp.
  6. Serve immediately.
