Spanish Rice

Ingredients:-

  1. Basmathi rice – 1.5 cups
  2. Butter – 2 tbsps
  3. Garlic – 3 big cloves, minced
  4. Carrot – 1 medium
  5. Potato – 1 small
  6. Beans – 5 to 6 numbers
  7. Cauliflower florets – 1/2 -3/4 cup
  8. Oil – 1 tbsp
  9. Boneless chicken breasts – 125 grams
  10. Tomato – 1 medium pureed in the mixer
  11. Red capsicum – 1/4 cup
  12. Cooked beef – 1/4 cup
  13. Cooked prawns – 6 numbers
  14. Eggs – 2 numbers

Method:-

  1. Soak the basmathi rice in water for 30 minutes.Drain and keep aside.
  2. Heat the butter & add the minced garlic cloves. Saute till you get an aroma. Add the carrots, french beans, potato, cauliflower florets & 1/4 tsp of salt. Fry for 5 minutes on medium high heat. Add the rice & fry for 3-4 minutes.
  3. Add 3 c of boiling water + 1.5 tsp of salt. Cover cook on medium low heat for 10 minutes/ till all the water is absorbed.
  4. In another pan, heat oil & add the chicken cubes + 1/2 tsp of salt + 1/4 tsp of pepper powder & fry till color changes. Cover cook on low heat for 10 minutes. Add the tomato puree + the bell pepper cubes & fry till dry. Add the beef & the cooked prawns. Mix well. Make a well in the center & crack in the eggs. Scramble adding 2 pinches of salt & cook till dry.
  5. Add the cooked rice to the meat and egg mixture. Mix well on high heat for 3 minutes & serve hot.
