Chicken Rings

  1. For the dough, combine 1.25 cup of plain flour, 1 heaping tbsp of milk powder, 1.25 level tsp of instant yeast, 1.5 tsp of vegetable shortening, 1/2 tsp of sugar and 1/2 tsp of salt. Add half of a beaten egg & enough lukewarm water. Knead for 10 minutes to make a very soft dough. Apply little oil over the dough & keep covered in a warm place for 1 hour.
  2. For the filling, heat 1 tbsp of oil & add 1 finely chopped onion , 1 tsp each of minced garlic & ginger. Fry till the onion turns pink. Stir in 1/4 tsp of turmeric powder, 1/2 heaping tsp of red chilly powder & cook till the raw smell goes.Add 1.5 cups of cooked & shredded chicken, salt, 1/4 cup of cilantro & mix well. Let this mixture cool completely.
  3. Punch the risen dough & knead for just a minute. Make small portions of the risen dough like you do to make puris. Roll out each portion into a 4″ diameter circle. Keep the chicken mixture at the center & roll tightly. Bring the two ends together & seal to make a ring ( refer to Italian doughnuts for a pictorial).
  4. Dip in beaten egg, roll in breadcrumbs & deep fry in hot oil on medium low heat till browned & crisp.
  5. Serve warm.
