Sweet Carrot Puri


  1. Heat 2 tbsps of ghee & roast 1 cup of semolina till brown in colour for 12 minutes on medium heat. Add 1/2 cup of milk & mix well so that no lumps are formed.
  2. Grate 1 big carrot. Add 3/4 cup of milk & cook the carrot till soft & dry. Mash the cooked carrot/ puree in the mixer/grinder.
  3. Mix together the rava/ semolina ( step 1), 1 cup of plain flour, 1/2 tsp of elaichi powder, 1/4 cup of caster sugar, 3/4 tsp of salt & the mashed carrots ( step 2).
  4. Knead to a slightly stiff dough adding water if needed.
  5. Keep covered for 4-5 hours for fermentation.
  6. Roll out the puris & deep fry in hot oil. These puris puff up really well. Fry till they are slightly browned from both the sides.
