Chocolate chip & walnut cookies with oats

  1. Preheat the oven to 180C.
  2. Powder 1.25 cup of quick cooking oats in your mixer to make oat meal.
  3. Sift together 1 cup of plain flour, 1/2 tsp of baking soda, 1/2 tsp of baking powder & a pinch of salt.
  4. Beat together 125 grams of softened butter & 1 cup of powdered sugar till light & fluffy. Beat in 1 egg & 1 tsp of vanilla essence.
  5.  Fold in the oatmeal & the sifted flour mixture.Fold in 1 cup of coarsely chopped walnuts, 1/2 cup of mini white chocolate chips & 1/2 cup of mini semi-sweet chocolate chips.
  6. Freeze the dough for 10 minutes.
  7. Line a cookie tray with foil. Drop level icecream scoopful of the dough on to the tray.
  8. Bake at 180C for 20 minutes.
