Labneh Sprout sandwich with Pita bread

You will need 3 pita breads for this recipe. Cut each pita bread pocket into 2 horizontally.

  1. Grind together 3/4 cup of labneh ( / curd cheese), 1 tbsp of tahini, 1 tbsp of lime juice, 1/4 – 1/2 tsp of salt, 4 tsps of extra virgin olive oil, 1/4 tsp of garlic paste & 1 tsp of chopped parsley. Add 1/4 cup of crumbled paneer, 1/4 cup of boiled bean sprouts, 1/4 cup of chopped onion, 1/4 tsp of salt, 1/4 tsp of pepper powder & 1/2 tsp of mustard paste. This is the sandwitch filling.
  2. On the base of each pita bread slice, place a lettuce leaf ( dipped in ice water till serving time) & spread the labneh sprouts mixture. Cover with the top half.
  3. Pan roast for a few minutes till crisp & golden brown in color.
  4. Serve immediately.
