Chilly Paneer wrap

  1. Let’s make the green rotis first. In a mixing bowl, combine 1 cup of atta, 1/2 tsp of salt, a pinch of sugar, 1 tsp of ghee and 1/2 cup of spinach puree. Knead for 5 minutes to make a soft dough. Keep aside for 30 minutes covered with a damp cloth. Make rotis as usual. But theses rotis will have a nice green color. Keep the cooked rotis warm by wrapping them in a foil.
  2. For the chilly paneer stuffing, heat 1 tbsp of oil & add 2 medium onions (thinly sliced) + 2 greenchillies ( cut into strips). Cook till the onions turn pink in color. Add 1 small green capsicum ( julienned) & cook for another 2 minutes. Add 200 grams of cottage cheese/ paneer ( cut into long thin fingers), 2 tsps of soy sauce, 1 tsp of red chilli sauce, salt to taste & toss well. Finally add 3 tsps of cornstarch mixed with 3 tsps of water & cook till the whole mixture thickens/ comes together.
  3. To make the wrap, place a cooked green roti on a clean work surface. Put a little paneer capsicum mixture on it in a row & roll tightly.
  4. Serve immediately.
