Chicken and vegetable pinwheel sandwitches

  1. Heat 2 tbsps of butter & add 4-5 big garlic cloves (minced) + 2 tbsps of celery. Stir fry till you get a very nice aroma.
  2. Add 1.5 medium onions (finely choppped) & cook till the onion turns its color to golden brown. Add 1 small tomato ( chopped), half of a grated carrot and 1/2 cup of finely shredded cabbage. Cook for 3 minutes on medium heat till the veggies turn soft.
  3. Add 1/4th of  a small capsicum, 200 grams of coooked & shredded chicken & 1/4 cup of grated paneer. Let this mixture cool down to room temperature.
  4. Add 3-4 tbsps of mayonnaise to the cooled chicken-veggie mixture & mix well. Check for salt & add more if needed.
  5. Use this as a stuffing to make your pin wheel sandwitches. Click here for a pictorial.
