Easy veggie tortilla rolls

  1. Mix together 3 tbsps of cream cheese, 1/4 cup of thick curds, 1 tsp of red chilli sauce, 1 small red capsicum ( finely chopped), 1 small green capsicum (finely chopped), 1/4 cup of boiled sweet corn kernels, 1 medium onion (finely chopped), 1 tsp of lime juice, 1 tbsp of cilantro & 1 minced garlic clove.
  2. Place the prepared filling evenly over a tortilla & roll up tightly. Wrap in foil & refrigerate for 30 minutes.
  3. When ready to serve, remove foil & slice each roll diagonally into 2″ slices & served chilled.

Note:- You could also add cooked & shredded chicken to the filling if you wish to.
