Biscuit Roti

  1. For the dough, mix together 1 cup of plain flour, 1 cup of roasted rice flour ( I used Appa podi), 11/4 tsp of salt & 2 tbsps of oil. Add enough water so as to make a stiff dough. Keep covered for 15-30 minutes.
  2. For the filling, heat 1 tbsp of oil. Add 2 tbsps of semolina & roast for 3-4 minutes.Add 1 cup of grated coconut & fry for 5 minutes. Add 2 heaping tbsps of sugar, 1/2 level tsp of kashmiri chilly powder, salt, a few torn curryleaves, salt & 1/2 cup of chopped cilantro. Mix well & switch off heat. Let this mixture cool down to room temperature.
  3. Divide the prepared dough into 16 equal portions.
  4. Roll out each portion into a circle like you do for puri. Place a little of the filling in the center, gather the edges & seal like you do for stuffed parathas. Dust with plain flour & carefully roll into a slightly thick circle.
  5. Deep fry in hot oil on medium heat till crisp & golden brown like you fry puris. These will puff up really well.
