- Heat 2 tbsps of oil in a pan and add 4 big garlic cloves (minced) & saute till you get a very nice aroma. Add 1 medium onion (finely chopped) & cook till it turns pink. Add 1 big carrot(finely chopped), 1/4 th of a small cabbage (finely chopped) & 1/2 of a medium green capsicum (finely chopped). Cook on medium heat for 5 minutes or till the veggies are almost soft. Add 1 tbsp each of red chilli sauce & tomato ketchup + 1/2 tsp of paprika powder + pepper powder to taste. Add 1 big potato (boiled, peeled & mashed) & mix well. This is the stuffing. Let this mixture cool down to room temperature.
- Make a dough with 2 cups of atta, 1 tsp of salt, 1 tbsp of ghee & enough lukewarm water. Keep covered for 30 minutes. Divide the dough into 10 equal portions. Shape each portion into a ball.
- Take a dough ball & roll it into a 6″ disc. Place the filling generously over the rolled out roti & cover it with another rolled out roti. Seal the edges thoroughly & roll out with a rolling pin vey gently.
- Heat a tawa & cook the paratha from both sides applying little oil till golden brown & crisp.
- Serve hot.
