  1. Soak 1/2 cup of basmathi rice in water for 5-6 hours. Drain all the water from the rice & powder it in your coffee grinder. Add little water & grind the rice to a very smooth paste.Transfer this rice paste to a thick bottomed vessel.Wash the mixer with a little water & add this water to the rice paste.
  2. Soak 2 generous pinches of saffron in 1/4 cup of hot water.
  3. Add 3 cups of milk ( I used low fat milk) & 1 cup of sugar to the rice paste & cook on low heat. Keep stirring continuosly. Add 1 more cup of milk when the mixture thickens. Add the soaked saffron & bring to a boil.
  4. Add 50 grams of cashews powdered coarsely & 1/2 tsp of powdered cardamom. Cook for 2 minutes more.
  5. Switch off heat & add 1 tbsp of rose water.
  6. Serve chilled in small clay pots. Garnish with sliced pistachios and almonds.
