Mixed masala mezhukkupuratti

  1. Heat 3 tbsps of coconut oil in a wok. Add 1 cup of onion (finely chopped)  + 1 big garlic clove (minced) & cook till it turns golden brown in colour.
  2. Add 3/4 tsp of kashmiri chilly powder & 1/4 tsp of turmeric powder & cook on low heat for a minute.
  3. Stir in 1 cup of cubed potato, 1 heaping cup of bite sized cauliflower florets, 10 fine french beans (cut into 1″ pieces) & half of a small carrot (finely chopped). Mix well & add 1/2 cup of water + 1/2 – 3/4 tsp of salt. Bring to a boil & cover cook on low heat for 20 minutes or till completely dry.
  4. Add 1/4 tsp of garam masala powder & mix.
