Vellarikka Stew

This is another recipe from Laksmi Nair’s cookbook & this stew goes very well with rice.

  1. Mix together 1 tsp of poppy seeds with 1/4 cup of water. Warm it in the microwave for 1 minute.
  2. Mix together 2 cups of vellarikka (cubed), 1 big potato (cubed), 2 medium tomatoes (cut each tomato into 4 pieces), 3-4 slit greenchillies, 1.5 cup of water, 1.25 tsp of salt & 2 medium onions (cut into cubes) in your pressure cooker. Drain the water from the poppy seeds & grind it with 2 tsps of coriander powder,a small piece of ginger & 1 tbsp of water to a smooth paste. Add this masala paste to the veggies in the cooker. Close the cooker & simmer for 5 minutes after the first whistle.
  3. Open the cooker only when the pressures subside. Add 3 heaping tbsps of coconut milk powder & bring to a boil. Cook further for 5-10 minutes. Mash some of the potatoes so tha the gravy turns thick.
  4. In another wok, heat 2 tbsps of coconut oil & splutter 3/4 tsp of mustard seeds. Add 3 dry red chillies (split), a few curryleaves, a pinch of hing & pour this seasoning over the stew.
