Beetroot thoran

  1. Cook 2 cups of finely chopped beetroot  adding 1/4-1/2 tsp of salt and 1/4 cup of water in your pressure cooker. Simmer for 5 minutes after the first whistle. Open the cooker once the pressures completely subside.
  2. Heat 2 tbsps of coconut oil & splutter 1/2 tsp of mustard seeds. Add 1 cup of finely chopped onion, 1 finely chopped greenchilly & 1 minced garlic clove. Fry till the onions turn golden brown in colour.
  3. Add 1/4 tsp of turmeric powder & fry on low heat for a minute.
  4. Add the cooked beetroot and 1/4 cup of grated coconut and fry well for 7-10 minutes on medium heat.
