This recipe will make a large 10″ pizza with regular crust.
For the pizza base
All purpose flour – 11/2 cups
Instant yeast – 1 level tsp
Lukewarm water – 2 tbsp + 3/4 cup (/ as needed)
Sugar –1.5 heaping tsps
Salt – 3/4 tsp
Olive oil – 1 tbsp
For the cheesy cream sauce
Garlic – 1 big clove, minced
Butter – 1 tbsp
Cooking cream – 3/4 c
Mixed herbs – 1/4 tsp (oregano, basil, rosemary)
Parsley – 1/4 tsp
Paprika powder – 1/2 tsp
Salt – a pinch
Pepper powder – 1/4 tsp
Cream cheese cubes/ triangles – 2 numbers, small or use 2 tbsps of cream cheese
Parmesan cheese – 3 tbsps
Fresh basil leaves – 1 tbsp
For the topping
Fresh spinach – 2 cups (chopped)
Chicken – 250 grams, chopped into small cubes
Sweet corn – 1/4 c ( tinned one)
Onion – 1 small , sliced long & thin
Pickled jalapenos – 1 number, chopped
Mozzarella cheese as needed ( I like to use Monte Cristo Brand modified with palm oil)
Cheddar cheese – 1/2 cup
Cottage cheese – 1/4 cup
Oregano – a pinch ( for sprinkling)
Crushed fresh basil – 2 tsp
For the pizza base, mix together the plain flour, yeast, sugar, olive oil , salt and lukewarm water. Knead the dough for a good 15 minutes, also keep banging the dough as you knead. Cover with a a damp cloth & keep undisturbed for 1-1.5 hours/ till the dough doubles in volume.While the dough is resting, make the sauce and the pizza toppings.
For the cheesy cream sauce, heat the butter. Add the minced garlic and cook till you get a nice aroma. Add the cream, salt, mixed herbs, dried parsley, pepper powder, paprika powder, grated parmesan cheese and the cream cheese cubes. Cook till the sauce is thick. Add the basil leaves & switch off heat. Let this sauce cool down completely to room temperature.
For the chicken topping, marinate the chopped chicken with 1 tsp of garlic paste, 1/2 tsp of salt , 3/4 tsp of pepper powder, 2 tbsps of thick curd, 2 tbsps of thick cream and 1/2 tsp of dried oregano for 1 hour. Heat 1 tbsp of oil in a pan & cook the marinated chicken on low heat till completely done on both the sides. It will take about 20 minutes on each side.
For the spinach topping, heat 1 tsp of butter in a pan & cook the spinach till it turns dry & the leaves wilt.
Preheat the oven to 200C.
Punch the risen dough and place it in a 10″ pizza pan. Poke it with a fork at several places. Spread out the creamy cheese sauce on it followed by a thin layer of grated mozzarella & cheddar cheeses. Top with the cooked chicken cubes, sliced onions, cooked spinach, jalapenos, sweet corn & cottage cheese. Sprinkle more grated mozzarella cheese, cheddar cheese, oregano & crushed basil on top.
Bake the pizza in a preheated oven at 200C for 23 minutes/ till the cheese melts & turns a bit brown.
Serve it hot.
