Herbed cheese and roasted capsicum sandwich

  1. For the herb cheese spread, combine 3/4 cup of crumbled Indian cottage cheese with 1 tbsp of thick curd, 2 tbsps of chopped cilantro, 1 big garlic clove (minced), salt & pepper powder to taste. Blend in a mixer till smooth.
  2. You will need one medium red, yellow & green bell pepper for this recipe. Apply 1/4 tsp of refined oil all over each capsicum. Take a capsicum &  roast it directly over flame till black spots are formed all over the bell pepper. Immerse the capsicum immediately in cold water & remove the charred portions. Remove the seeds of the bell pepper & cut it into juliennes. Repeat with the other capsicums.
  3. Season the capsicum juliennes with salt & 1 tsp of mixed herbs ( parsley, oregano & basil).
  4. Take a slice of bread & spread the herb cheese mixture over it. Put capsicum juliennes over it. Cover it with a lettuce leaf & place another bread slice over it to close the sandwich.
  5. Toast the prepared sandwich & serve immediately. Repeat to make more sandwiches.
