Honey and mustard chicken sandwitch

  1. In a medium mixing bowl, combine together 1 cup of cooked and shredded chicken, 2 tbsps of mayonnaise, 1.5 tbsps mustard paste, 2 tbsps of honey, half of a medium red capsicum (thinly sliced)+ half of a medium onion (thinly sliced)+ 3 black olives (deseeded & chopped), salt & pepper to taste. This is the sandwitch filling.
  2. To make the sandwitch, take a slice of bread & place a lettuce leaf on it. Place a little chicken mixture over the leaf & cover with another slice of bread to close the sandwitch. Proceed to make more sandwitches in the same way.
  3. Serve immediately.
