Chow- Chow and chana dal masala rice

Ingredients:-

For the aromatic rice

  1. Basmathi Rice – 1.5 cup
  2. Ghee – 1 tbsp
  3. Thick coconut milk – 1 cup
  4. Water – 2 cups
  5. Salt – 1.5 tsp

For the chow-chow masala:-

  1. Chana dal – 1/2 cup
  2. Ghee – 1 tbsp
  3. Fennel seeds – 3/4 tsp.
  4. Onion – 2 medium, sliced thinly
  5. Garlic – 4 big cloves (pounded)
  6. Ginger – 1 tsp ( ground to a paste/pounded)
  7. Curryleaves – a few
  8. Greenchilly – 2 numbers,slit
  9. Red chilly powder –1/2 tsp
  10. Coriander powder – 1.25 heaping tsp
  11. Turmeric powder – 1/4 tsp
  12. Cumin powder – 1/2 tsp.
  13. Chow-chow – 2 cups, cubed
  14. Tomato – 1/2 cup, finely chopped
  15. Green peas – 1/4 cup
  16. Red capsicum – 1/4 cup
  17. Garam masala powder – 1/2 tsp
  18. Chopped cilantro – 1/4 cup
  19. Chopped mint leaves –1/4 cup
  20. Powdered cardamom – a pinch
  21. Powdered cinnamon – a pinch
  22. Salt – to taste

Method:-

  1. Mix the thick coconut milk & water.
  2. Cook the chana-dal in your cooker adding 3/4 tsp of salt, 1/2 tsp of ghee & 1 cup of water. Simmer for 8 minutes after the first whistle. The dal should be just 3/4th done.
  3. Wash the rice several times under running water & soak it in water for 30 minutes. Drain the water completely from the rice.
  4.  For the masala, heat ghee & add the fennel seeds. Allow them to pop & throw in the thinly sliced onions, the slit greenchillies, pounded garlic, pounded ginger & a few curryleaves.
  5. When golden brown, add  coriander powder, red chilly powder, turmeric & cumin powders; fry for a minute on low heat.
  6. Add the cubed chow-chow, salt to taste & saute’ for 5 minutes on medium heat.
  7. Throw in the choppped tomatoes & saute’ further for 5 minutes.
  8. Add the peas & capsicum & cook for 2-3 minutes on medium high heat. Add cooked chana dal, chopped cilantro, mint leaves , elaichi powder & cinnamon powder to the chow-chow mixture. Cover cook on low heat for 10 minutes.
  9. Heat the ghee, add the rice & fry till it turns opaque. Add the chow-chow masala & mix. Pour 3 cups of boiling water-coconut milk mixture & add 1.5 tsps of salt. Cover cook on low heat for 10 minutes.
  10. Serve hot with raitha.
