Chocolate and Nut tea cake

Ingredients:-

  1. Plain flour – 1 cup
  2. Baking powder – 1 tsp
  3. Salt – a pinch
  4. Butter – 100 grams, at room temperature
  5. Powdered sugar – 3/4 cup
  6. Eggs – 2 numbers, medium
  7. Vanilla essence – 1 tsp.
  8. Orange/lemon zest – 1 tsp.
  9. Milk – 1/4-1/2 cup
  10. Cashews – 1/4 cup, coarsely chopped
  11. Semi-sweet chocolate chips – 3 tbsps

Method:-

  1. Preheat the oven to 180C.
  2. Prepare a 6″ cake tin.
  3. Sift together 1 cup of plain flour, 1 tsp of baking powder,  & a pinch of salt.
  4. Beat together 100 grams of softened butter & 3/4 cup of powdered sugar till light & fluffy for 10-15 minutes.
  5. Beat in 2 medium eggs , one by one & beat well after each addition.
  6. Beat in 1 tsp of vanilla essence and 1 tsp of orange zest.
  7. Fold in the sifted dry ingredients alternated with 1/4-1/2 cup of milk.
  8. The cake batter will be thick but will be of dropping consistency.
  9. Fold in the nuts & the chocolate.
  10. Bake at 180C for 30 minutes or till a skewer inserted into the center of the cake comes out clean.
