Tomato Masala Rice

A very simple rice packed with flavours.

Ingredients :-

  1. Basmathi Rice – 1.5 cups
  2. Ghee – 1 tsp.
  3. Boiling water – 3 cups
  4. Sunflower / gingelly oil – 2 tbsps.
  5. Mustard seeds – 3/4 tsp.
  6. Urad dal – 1 tsp.
  7. Broken cashews – 1 tbsp.
  8. Curry leaves – a few
  9. Dry red chilly – 1 number, split
  10. Onion – 2 cups, finely chopped
  11. Greenchilly – 2 to 3 numbers, slit
  12. Ginger – 1 tbsp, chopped
  13. Red chilly powder – 1/2 tsp.
  14. Turmeric powder – 1/2 tsp.
  15. Tomato – 1.5 cups, chopped
  16. Garam masala powder – 3/4 tsp.
  17. Cilantro – 1/4 cup

Method:-

  1. Soak the rice in water for 30 minutes. Drain out all the water from the rice & keep the rice aside.
  2. Heat the ghee & fry the rice for 3-4 minutes. Add boiling water & 1.5 tsps. of salt & cover cook on medium low heat for 10 minutes. Keep this cooked rice aside.
  3. Heat the oil & add the mustard seeds. Allow them to splutter. Add the   urad dal & cashews & fry till they turn golden brown in colour.
  4. Add the curryleaves & dry red chilly. Throw in the onions, ginger & greenchilly. Cook till the onions turn golden brown in colour.
  5. Add the red chilly & turmeric powders & cook for a minute on low heat.
  6. Throw in the chopped tomatoes & add salt to taste. Cook for 15-20 minutes adding water as & when required.
  7. Add the garam masala powder & cilantro.
  8. Add the cooked rice to this tomato masala & mix.
  9. Your yummy tomato masala rice is now ready to serve.
