Chicken fry – Thiruvananthapuram style

Ingredients:-

  1. Chicken – 500 grams, cut into small cubes
  2. Kashmiri chilly powder – 1/2 heaping tbsp.
  3. Paprika powder – 1/2 heaping tbsp.
  4. Red chilly powder – 1/4 heaping tbsp.
  5. Orange red food colour – 3/4 tsp.
  6. Garlic -6 big cloves (made into a paste)
  7. Ginger – 1 heaping tsp. (ground to a paste)
  8. Salt – 11/4 tsp.
  9. Lime juice – of one lime
  10. Garam masala powder – 1 level tsp.
  11. Oil – 1 tbsp
  12. Fennel seeds – 1/2 tbsp. (level)
  13. Maida – 1 tbsp (level)
  14. Red chilly flakes – 1 level tbsp.
  15. Onions – 2 numbers, medium, thinly sliced
  16. Coconut oil – 3 tbsps.

Method:-

  1. Marinate the chicken pices with all the ingredients from 2 to 14 for atleast 2 hours.
  2. Heat coconut oil in a frying pan & shallow fry the chicken pieces on low heat till done. This will take about 35 minutes on each side. Drain on kitchen towels.
  3. To the same oil, add te onions & fry till they turn golden brown in colour. Add the fried chicken pieces & mix well.
  4. Serve hot.
