Easy chicken and potato masala

Ingredients:-

  1. Chicken – 500 grams, boneless breasts, cut into small cubes
  2. Oil – 2 tbsps +  1 tbsp divided
  3. Onion – 2 cups, thinly sliced
  4. Greenchilly – 2 numbers, slit
  5. Ginger – 1 tbsp (made into a paste)
  6. Garlic – 7 big cloves, made into a paste
  7. Shallots – 5 numbers, made into a paste
  8. Red chilly powder – 1 /2 heaping tbsp.
  9. Kashmiri chilly powder – 1/2 heaping tbsp.
  10. Coriander powder – 1.5 heaping tbsp.
  11. Turmeric powder – 1/4 tsp.
  12. Pepper powder – 1/4 tsp.
  13. Tomato – 1/2 cup, finely chopped
  14. Garam masala powder – 3/4 tsp.
  15. Potato – 1 number, small, cut into small cubes
  16. Water – 1/2-3/4 cup
  17. Shallots – 6 numbers, thinly sliced.
  18. Salt – 11/4 tsp. or to taste

Method:-

  1. Heat 2 tbsps of oil in a broad non-stick pan. Add the onions & the greenchillies. Cook till the onions turn golden brown in colour.
  2. Add the ginger, garlic & shallot pastes & cook for 10 minutes.
  3. Stir in the coriander, red chilly, kashmiri chilly , turmeric & pepper powders & cook on low heat for 2 minutes.
  4. Add the tomato & cook for 15 minutes. Stir in the chicken pieces, salt & garam masala powder. Lower heat & cook for 10 minutes without the lid or till the chicken pieces are well coated with the masala.
  5. Add the potato & water. Cover cook on low heat for 25 minutes. Switch off heat.
  6. In another pan, heat 1 tbsp of oil & fry the sliced shallots till they turn golden brwon in colour. Pour this over the chicken masala.
  7. Serve this curry hot with chapathis.
