Chicken Ularthiyathu

Ingredients:-

  1. Chicken – 500 grams, cut into small pieces
  2. Salt to taste
  3. Red chilly powder – 1/2 heaping tsp.
  4. Turmeric powder – 1/2 tsp.
  5. Garlic – 6 big cloves, ground to a paste
  6. Ginger paste – 1 tsp.
  7. Garam masala powder – dry roast 1 level tbsp of fennel seeds, 1″ piece of cinnamon, 1 small star aniseed, 6 cloves & 6 cardamom & grind them in your coffee grinder. Use only half of this ground masala powder for making the stir fry
  8. Tomato – 3/4 cup, chopped
  9. Coconut oil – 3 tbsps.
  10. Mustard seeds – 3/4 tsp.
  11. Dry red chilly – 2 numbers, split
  12. Curryleaves – a few
  13. Onion – 2 cups, finely chopped
  14. Shallots – 1/2 cup, thinly sliced
  15. Greenchilly – 3 numbers, slit
  16. Red chilly flakes – 1 level tsp.
  17. Pepper powder – 1/4 tsp.

Method:-

  1. Cook the chicken pieces adding 1 tsp. of salt, turmeric powder, red chilly powder, tomato, ginger garlic paste, half of the garam masala powder & 2 tbsps of water. Cover cook on low heat for 20 minutes.
  2. In a pan, heat coconut oil. Add the mustard seeds & allow them to pop up. Throw in the dry red chillies, curryleaves, shallots, onions & greenchillies. Fry till they turn golden brown in colour.
  3. Add the cooked chicken pieces along with any left over water. Also add red chilly flakes & pepper powder. Cook on very low heat for almost 1 hour.
  4. Serve hot with rice & moru kachiyathu.
